Guariroba Farm is one of the top coffee producers in Japan, having won the COE (Cup of Excellence) in 2016.
The Guariroba farm has a history of coffee production spanning over 100 years, and while it maintains the excellence of traditional methods, it also incorporates the latest technology into its production.
In recent years, they have developed a new fermentation method, producing coffee with a unique, clear flavor.
The lot being handled by c_thought coffee this time has undergone a refining process called Double Carbonic Maceration, which involves two anaerobic fermentations: lactic acid fermentation and alcoholic fermentation, resulting in a unique flavor.
The variety is Yellow Catucai, and it is made using the red honey method and African bed slow drying, so it has a thick texture and a moderate sweet fruit aroma.
The aroma is spicy and strong, reminiscent of Japanese pepper or black pepper, and the taste is sweet, reminiscent of brown sugar.
As it cools, you can taste the sweetness and acidity of grape-like fruit, making it an interesting drink with a complex flavor that changes constantly.
